Asian Lettuce CupsStunningly straight forward and packs a real punch.Watch me make it on YouTubeDownload an accessible word version hereIngredients2 tablespoons olive oil1 medium onion, peeled and diced2 garlic cloves, peeled and crushed1 (8ounces) can water chestnuts, drained, rinsed and chopped1 lb ground (finely minced) brown turkey ¼ cup soy sauceSauce:¼ cup ketchup4 teaspoons rice vinegar4 teaspoons sesame oil1 teaspoon dried red pepper flakes (2 for a spicier flavour)2 tablespoons brown sugar1 head iceberg lettuce (or your lettuce choice), separated in to individual leaf “cups” ¼ cup scallions, chopped¼ cup peanuts, choppedMethod:1.Heat the oil in a frying pan. 2.Add the onions, garlic and water chestnuts and sauté for 3-4 minutes. 3.Add the turkey and cook for about 5 minutes. 4.Mix the sauce ingredients together and then add to the pan. Cook until the turkey mixture looks like a “thick sloppy joes”. 5.Take the pan off the heat and spoon the mixture in to the lettuce cups and garnish. Oriental Green BeansGive simple beans a hint of the East when you want a more exotic vegetable accompaniment.1 ½ pounds green beans, trimmed3 tablespoons soy sauce1 tablespoon sesame oil1 teaspoon sugar6 cloves garlic, peeled and minced.Method:Cook the green beans in boiling water for 4-5 minutes.Meanwhile, combine soy sauce, sesame oil and sugar, set aside.Spray a frying pan, skillet or wok with non-stick spray or spray oil.Using medium high heat, cook the garlic for 20-30 seconds until softened, stirring constantly. Add the drained green beans and cook for 2 minutes, stirring to coat with the garlic. Add the soy sauce mixture and cook for 1-2 minutes, stirring, until most of the liquid has evaporated.My Tips:•Chicken, white turkey meat, pork, beef or other meat could be used but cooking times will vary. The meat is more like sausage meat than mince.•Serve with plain Basmati rice and the oriental green beans which can be cooked while the turkey mix thickens with the sauce.
