Watch me make it on YouTube Download an accessible word version here Ingredients 2 tablespoons olive oil 1 medium onion, peeled and diced 2 garlic cloves, peeled and crushed 1 (8ounces) can water chestnuts, drained, rinsed and chopped 1 lb ground (finely minced) brown turkey ¼ cup soy sauce Sauce: ¼ cup ketchup 4 teaspoons rice vinegar 4 teaspoons sesame oil 1 teaspoon dried red pepper flakes (2 for a spicier flavour) 2 tablespoons brown sugar 1 head iceberg lettuce (or your lettuce choice), separated in to individual leaf “cups” ¼ cup scallions, chopped ¼ cup peanuts, chopped Method: 1. Heat the oil in a frying pan.  2. Add the onions, garlic and water chestnuts and sauté for 3-4 minutes.  3. Add the turkey and cook for about 5 minutes.  4. Mix the sauce ingredients together and then add to the pan. Cook until the turkey mixture looks like a “thick sloppy joes”.  5. Take the pan off the heat and spoon the mixture in to the lettuce cups and garnish. Oriental Green Beans Give simple beans a hint of the East when you want a more exotic vegetable accompaniment. 1 ½ pounds green beans, trimmed 3 tablespoons soy sauce 1 tablespoon sesame oil 1 teaspoon sugar 6 cloves garlic, peeled and minced. Method: Cook the green beans in boiling water for 4-5 minutes. Meanwhile, combine soy sauce, sesame oil and sugar, set aside. Spray a frying pan, skillet or wok with non-stick spray or spray oil. Using medium high heat, cook the garlic for 20-30 seconds until softened, stirring constantly. Add the drained green beans and cook for 2 minutes, stirring to coat with the garlic. Add the soy sauce mixture and cook for 1-2 minutes, stirring, until most of the liquid has evaporated. My Tips: Chicken, white turkey meat, pork, beef or other meat could be used but cooking times will vary.  The meat is more like sausage meat than mince. Serve with plain Basmati rice and the oriental green beans which can be cooked while the turkey mix thickens with the sauce.
